Cut the spinach into bite-sized lengths. Bring the beef to room temperature.
[Cook the japche:] Boil the japche in boiling water for about 10 minutes until al dente. Drain and cut into bite-sized lengths.
Heat the sesame oil over medium heat. Add the beef, spinach, shiitake mushroom, carrot, and onion (in this order) and fry until cooked. Add the japche.
