Steps to make Mumbai street style Vadapau:
  1. Wash and boil potatoes. Peel the skin off. Let them cool down and mash. Add in salt, green chillies and ginger paste, ground coriander seeds, garam masala, chopped coriander and lemon juice. Put tempering pan on gas. Add in oil. Start adding mustard seeds, asafoetida and chopped curry leaves. Add in turmeric powder and prepare tempering. Add this into mashed potato masala. Mix well.   4. For green chutey in a mixer jar add washed coriander, green chillies, garlic, ginger, salt. Grind it to make a paste. Add Little water to make it of a chutney consistency. Take out in a bowl and squeeze lemon. Mix well. Our green chutney is ready.
  5. To assemble slice a Pau tillid way. Apply both green and red chutey. Put some fried zurmuri. Put one vada and close the Pao. Serve with green chilli.
