The ingredients needed to make Paneer & Spinach Pasta Bake:
  1. Take 2 cups pasta penne -
  2. Get 2 cups Spinach (cleaned & chopped) -
  3. Get 1 cup Paneer -
  4. Get 2 nos Onion (finely chopped) -
  5. Make ready 3 nos Tomato -
  6. Prepare 8 to 10 nos Garlic chopped -
  7. Get Mixed Italian herbs - to sprinkle
  8. Get Olive oil butter or - for tossing
  9. Make ready to taste Salt -
  10. Take 1 tsp blackpepper powder -
  11. Get 1   1/2 tsps Chill flakes (fine)-
  12. Get 3 nos Cheese slices -
  13. Prepare Mozzarella cheese - to top
  14. Get 1/2 no Capsicum diced (optional) -
Steps to make Paneer & Spinach Pasta Bake:
  1. Marinate Paneer - with chilli flakes 1/2 tsp, salt, lemon juice and thick yogurt. Optional to add diced onion and capsicum in the marination.
  2. Prepare tomato based pasta sauce. For this, blanch tomatoes in hot water. Peel of skin and grind in a blender.
  3. In a non stick kadai, add  oil, 4 to 5 chopped garlic followed by finely chopped onion (1 no). Let it change colour slightly, add blended tomato purée and allow it to get cooked for 10 min.
  4. Add mixed italian herbs, chilli flakes - 1/2 tsp and freshly ground pepper, salt  and cook for another 5 min.
  5. Set aside
  6. Stir fry spinach - for this in the same non stick kadai, add oil, remaining chopped garlic, chopped onion and the cleaned spinach. Followed by salt to taste and chilli flakes - 1/2 tsp
  7. And let the spinach  get cooked. Keep aside
  8. Cook penne pasta in water with a tsp of oil and salt.
  9. Let the penne pasta get cooked for 8 to 10 min or as per package instruction.
  10. Drain the pasta and slightly toss it with butter or olive oil
  11. Set aside
  12. Now grease the baking dish with olive oil
  13. Layer it with tomato sauce we prepared. Reserve half of it for the next layer.
  14. Followed by a layer of cooked pasta (1/2 the amount we cooked)
  15. Top  it with spinach stir fry and spread evenly
  16. Now tear the readymade cheese slices to pieces and layer it on top of spinach
  17. Layer again with remaining penne pasta
  18. Layer it with remaining tomato sauce
  19. Layer it with marinated Paneer and Mozzerella cheese.
  20. Allow it to bake in a preheated oven  in 150 degrees for 20 min
  21. Remove from oven & Serve hot.
