Take 1 cup potato & 1 cup cauliflower cut into medium to small pieces (equal quantity of potato and cauliflower)
Take 1 cup tomato puree
Prepare 1 chopped tomato
Get 2 chopped green chillies
Get Ginger chopped and green coriander
Get 1/2 tsp cumin seeds (jeera)
Prepare 2 tbsp dry coriander powder
Get 1/2 tsp garam masala
Take 1/2 tsp turmeric
Get 1/2 tsp red chilli powder
Get 1 tsp dry mango powder optional (depends on sourness of tomatoes)
Prepare 1 pinch Asafoetida (hing)
Prepare to taste Salt accordingly
Take Oil to fry and cook
Instructions to make Aloo Gobhi masala recipe::
Deep fry potato and cauliflower till golden brown in hot oil.
Heat 2 tbsp oil in a pan or kadai and add hing, cumin seeds green chillies and ginger. Cook for half a minute on high flame.
Add turmeric, dry coriander powder and cook for another 30 seconds.
Add tomato puree and cook it with all the spices left (masalas) till it leaves oil.
Now add fried potato and cauliflower along with chopped tomato and coo it for 3-4 minutes.
Add a little water if sabzi looks dry.
