  1. Take 3 big potatoes
  2. Prepare 3 onion sliced
  3. Prepare 1 tomato chopped

  7. Make ready 1/2 tsp salt
  8. Get 1/2 tsp turmeric powder

Instructions to make Egg and potato bhujia:
  1. Cut the potatoes in thin long strips along with the skin (do not remove the skin)
  2. Heat oil in a kadhai. Add panch foran to it. Let it splutter..then add the potatoes, 1 sliced onion,salt,turmeric powder and chilli powder. Mix all well on high flame… after some time lower the flame on medium heat… stir continuously….fry till golden. Remove the fried potatoes from oil on a plate.
  3. Now reduce the oil to one tbsp in the same kadhai… remove the rest of the oil… now add 2 sliced onions and chopped chillies to it… fry the onions till it turns pink… then add chopped tomatoes to it… cook till it is mushy…
  4. Then beat the eggs along with some salt in a bowl… add this beaten egg to the onion mix and fry and scramble…
  5. Then quickly add the fried potatoes to it and mix well.
  6. Serve hot along with roti or paratha.
