Peel the yam and potatoes, dice into smaller pieces, wash and keep separately. Soak dry fish to soften it
Put a pot of water on fire, add your yam and leave for boil for some minutes. After about 7minutes, add your potatoes to the yam. At this stage I normally add my diced onion, crayfish, seasoning cubes and salt.
Keep checking until the yam and potatoes are tender, then add the diced plaintain. Add more water if the level has gone down
Add your pepper and tomatoes, and dry fish
Add your palm oil and reduce the heat.
Add your scent leaves and pumpkin leaves, stir and allow to simmer for few minutes
Break the eggs into a bowl, add salt and seasoning and mix till it becomes smooth. Pour inside nylon and boil.
